Pumpkin Spice Pancakes

I love pancakes! These pancakes in particular though are especially good. They are also particularly popular during the fall season as there are more than enough pumpkins to go around at harvest time. Try them out with a little whipped cream and pancake syrup. Yum!

Ingredients:

2 cups flour

1 cup pumpkin puree

2 tbsp olive oil

2 tsp baking powder

1 tsp baking soda

3 tbsp sugar

1 tsp ginger

1 tsp nutmeg

1 tsp cinnamon

1/2 tsp salt

1 tsp vanilla extract

1 cup milk

In a large mixing bowl combine flour, baking powder, baking soda, salt, sugar, nutmeg, ginger & cinnamon. In a separate Large mixing bowl combine milk, pumpkin puree, eggs, oil and vanilla extract. Whisk to combine well and remove lumps. Next, add combined dry ingredients to wet ingredients and stir in well.

Next, grease skillet and heat to medium heat. Pour 1/2 cup of batter into the heated skillet and cook until both side is brown. Flip pancake unto the other side and cook until brown. Repeat until all batter is used up.

Serve pancakes with maple syrup, strawberries, whipped cream, etc.
