Triple Slice Scramble Egg Grill Cheese Sandwich

Grill cheese anything always reminds me of my youngest daughter. When she was very little, grill cheese sandwiches were her favorite meal for lunchtime. It was so funny that every day when we would pick her up from Kindergarten, we'd ask her what she wanted for lunch today, and the answer would always be a grilled cheese sandwich with a smile. To this day she still loves grill cheese sandwiches but not as much. She inspired me to create this delicious scramble egg grill cheese sandwich. It is very cheesy and can be served for both breakfast and lunch.

Ingredients:

3 eggs

3 slices of whole wheat bread

1/3 cup yellow bell pepper chopped

1/2 cup red bell pepper chopped

1 cup shredded cheddar cheese

1/3 cup onion chopped

1/2 cup green onion chopped

1 cup mushroom chopped

1/2 cup milk

3 tsp butter

1/2 tsp salt

1/2 tsp black pepper

In a medium mixing bowl whisk eggs, milk, salt & pepper and set aside. Heat skillet over medium heat and cook yellow bell pepper, red bell pepper, onion, green onion & mushroom. Then add combined eggs, milk, salt & pepper and cheese. Stir to scramble and set aside when cooked.

Butter three slices of bread and layer one slice with the scrambled eggs.

Take your second slice of bread and place it on top of the scrambled eggs. Take another helping of the scrambled eggs and place it on top of the second slice. Complete the sandwich by placing the third slice on top of the eggs. Butter the top and bottom slices. Grease your skillet and add the sandwich to the skillet. Cook both sides 2-3 minutes or until brown. Serve!
