Carrot Zucchini Fritters

These veggie fritters are perfect for breakfast, lunch, or even as a side dish for dinner. They are a good way to get your vegetable fill and they are very tasty too!


2 carrots

1 zucchini

2 eggs

1 cup Flour

1/2 tsp. salt

1/2 cup milk

1/2 pepper

1/2 chopped onion

1 tbsp. chopped green onion

1 tbsp margarine

1 cup cheddar cheese

Wash carrots and zucchini. In a large bowl grate carrots and zucchini, then add flour, salt, pepper, onions, shredded cheese and margarine. In a small bowl whisk eggs together. Add milk and eggs to the mixture and mix together Heat oil in a skillet. Use 1/3 cup to mixture into heated. Cook each side for approximately 2-3 minutes and serve with sour cream or yogurt. Enjoy!
