Morning Glory Muffins

A very healthy way to start off your day! This muffins are packed with fruits and if you so choose, you can also toss in some almonds or pecans into your batter for an added crunch.


2 cups all purpose flour

1 cup sugar

2 tsp. cinnamon

2 tsp. baking soda

1 1/4 tsp. vanilla extract

1/4 tsp. salt

2 cups carrots (grated)

1 1/3 cup crushed pineapple

1/2 cup shredded coconut

1 egg

1/3 cup extra virgin olive oil

Half of one apple (grated)

Yield: 18 muffins

Preheat oven to 325º F. Combine flour, baking soda, cinnamon, and salt together in a bowl. Grate your carrots and apple and add them to the flour along with the shredded coconut. Take your crushed pineapple and strain out all of the juice before adding it to the flour mix. In a separate bowl cream your egg and sugar then stir in the oil and vanilla. Mix the flour batter and slowly add your egg mixture until everything is blended together evenly.

Take your muffin tin an pour an even amount of the batter into each of the muffin cups and bake the muffins for 15-20 minutes. Let them cool after they're done so that they can easily be removed from the muffin cups and enjoy!
